Fried dumpling — also called Johnny cake — is the workhorse of the Jamaican breakfast: a simple fried bread that's crunchy outside and fluffy within. Split it open and fill it with ackee & saltfish, callaloo, or just butter and cheese.

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp sugar + ½ tsp salt
  • 2 tbsp butter or shortening
  • ~¾ cup water
  • Oil for frying

Method

  1. Whisk the flour, baking powder, sugar and salt. Rub in the butter with your fingertips until crumbly.
  2. Add water a little at a time until a firm, smooth (not sticky) dough comes together. Cover and rest 10 minutes.
  3. Divide into 8 balls and flatten each slightly into a thick disc.
  4. Heat about ½ inch of oil to medium. Fry the dumplings 4–5 minutes per side, turning, until deep golden and cooked through. Keep the heat moderate so the centers cook before the outsides over-brown.
  5. Drain and serve warm.

Too-hot oil browns the outside while the middle stays raw. Moderate heat gives you that signature crisp shell and fluffy center.
