Okra juice (or "okra water") is a humble, old-fashioned Jamaican drink made by steeping fresh okra in water until it releases its natural juice, then brightening it with ginger and lime. It's light, cooling and a little earthy — a traditional refresher our grandparents always knew.
Ingredients
- 8–10 fresh okra pods
- 4 cups water
- 1 thumb fresh ginger, sliced
- Juice of 1 lime
- Honey or sugar, to taste
Method
- Wash the okra well and slice into rounds. Add to the water with the sliced ginger.
- Let it steep several hours or overnight in the fridge so the okra releases its natural juice (you'll see the water turn silky). For a quicker version, pulse briefly in a blender.
- Strain thoroughly through a fine sieve to remove all the pulp and seeds.
- Stir in the lime juice and sweeten to taste.
- Serve well chilled over ice.
🌿 Good to know
Okra juice is naturally a little viscous — that's normal. Plenty of lime and ginger keep it bright and refreshing. Shared as a traditional drink, not a health claim.
The old-time cooling drink
Okra juice is an old-time Jamaican drink — fresh okra steeped in water with ginger and lime, then strained and sweetened into a cooling, gently viscous refresher. It has long been made at home as a traditional drink and folk remedy, and it's about as simple as a recipe gets.

Ingredient notes & substitutions
- Okra — fresh, sliced.
- Ginger — fresh, for warmth and bite.
- Lime — for brightness, and it cuts okra's natural viscosity.
- Sweetener — sugar or honey to taste, plus water.
🔥 Pro tips
Slice the okra and steep it in water — often overnight — rather than boiling it. Strain well through a fine sieve to remove the pulp. Lime and ginger are essential here: they balance the natural sliminess and turn it into a genuinely refreshing drink. Serve it very cold.
Common mistakes to avoid
- Boiling it. Steeping keeps the character; boiling changes it entirely.
- Not straining enough. Strain well or the texture is unpleasant.
- Skipping the lime and ginger. They're what make it drinkable and bright.
- Serving it warm. It needs to be properly cold.
What to serve with okra juice
- Ice-cold, on a hot day.
- Alongside a heavy meal as a refresher.
Storage & reheating
Okra juice keeps for 2–3 days refrigerated in a sealed bottle. Shake before pouring, as it settles. It isn't suitable for freezing.
