Toto is an old-time Jamaican coconut cake — humble, dense and moist, sweetened with brown sugar and perfumed with nutmeg and vanilla. It's baked in a pan and cut into squares, perfect with a cup of tea or Milo.

Ingredients

  • 2 cups flour
  • 1 cup grated coconut
  • ¾ cup brown sugar
  • ½ cup melted butter
  • 1 tsp baking powder + 1 tsp nutmeg
  • 1 tsp vanilla
  • ~¾ cup coconut milk

Method

  1. Whisk together the flour, grated coconut, brown sugar, baking powder and nutmeg.
  2. Stir in the melted butter, vanilla and enough coconut milk to make a thick, spoonable batter.
  3. Spread into a greased 8×8 baking pan and smooth the top.
  4. Bake at 350°F (175°C) for 25–30 minutes, until golden and a toothpick comes out clean.
  5. Cool in the pan, then cut into squares.

🥥 Use fresh coconut if you can

Freshly grated dry coconut gives toto its signature moist, chewy texture. Desiccated works in a pinch — just add a splash more coconut milk.

The little coconut teacake

Toto is a small, dense Jamaican coconut cake — moist, nutmeg-spiced and cut into squares, traditionally baked for teatime and church gatherings. Homey and unpretentious, it's the kind of cake that lives in a tin on the counter and somehow disappears by evening.

Coconut and nutmeg do all the work here.

Ingredient notes & substitutions

  • Coconut — freshly grated or desiccated; the defining flavour.
  • Flour and brown sugar — the base.
  • Nutmeg — essential — with cinnamon and vanilla.
  • Butter and coconut milk — coconut milk in the batter makes it richer.

🔥 Pro tips

Keep it dense and moist; toto isn't a fluffy sponge. Using coconut milk in the batter as well as grated coconut deepens the flavour considerably. Bake until just set — a skewer should come out with a few moist crumbs, not bone dry. Cool it in the tin, then cut into squares.

Common mistakes to avoid

  1. Over-baking. It turns dry and crumbly — check it early.
  2. Expecting a light sponge. Toto is meant to be dense.
  3. Skimping on coconut or nutmeg. They are the whole flavour.
  4. Over-mixing. It toughens the crumb.

What to serve with toto

  • With a cup of tea, teatime style.
  • Alongside gizzada and bulla cake.
  • As an everyday snack cake.

Storage & reheating

Toto keeps for 4–5 days in an airtight tin and stays moist. It freezes for up to 3 months — wrap the squares individually for easy grabbing.

Is toto the same as coconut drops?
