Known as haldi doodh, golden milk has been a fixture in Indian kitchens for generations — a warm, fragrant cup made by simmering milk with turmeric and a little black pepper and cinnamon. It's traditionally enjoyed as a cozy bedtime drink. Here's the classic way to make it.
Ingredients
- 1 cup milk (dairy or plant-based)
- ½ tsp ground turmeric
- 1 pinch black pepper
- ¼ tsp ground cinnamon
- 1 small piece fresh ginger, grated (optional)
- 1 tsp honey or maple syrup, to taste
Method
- Pour the milk into a small saucepan and warm it over medium heat.
- Whisk in the turmeric, black pepper, cinnamon and grated ginger if using.
- Lower the heat and let it simmer gently for about 5 minutes, whisking now and then so it doesn't boil over. The pepper helps carry turmeric's flavor and color.
- Strain if you used fresh ginger, sweeten with honey or maple syrup to taste, and pour into a mug. Sip warm.
